Easy Bacon Pancakes

Serves 4 | 10 mins prep | 20 mins cook time
Ingredients
200g Reuben's Streaky Bacon
2 cups self-raising flour
50g butter, melted
1½ cups milk
2 eggs plus 2 egg whites, beaten until stiff
½ cup sugar
1 tsp vanilla essence
Butter or oil for frying
METHOD
Place the flour and sugar in a large bowl and set aside.
In a separate bowl, mix together milk and 2 whole eggs, before pouring over flour mixture. Stir to combine.
Carefully fold through the 2 beaten egg whites until the mixture is combined and fluffy.
Heat a small amount of butter or oil in a pan and cook pancakes slowly for 3-4 minutes on each side. The mixture should make 8 pancakes
While the pancakes cook, fry the bacon in a pan or bake in the oven.
Serve pancakes with hot sizzling bacon, fresh berries and maple syrup.
Tip
No maple syrup? Drizzle with a little honey or golden syrup instead.
