Corned Beef Reuben Sandwich

SERVES 1 | 5 MINS PREP | 5 MINS COOK TIME
INGREDIENTS
3-4 slices cooked corned beef
2 slices sourdough
2 Tbsp butter
2 slices Swiss cheese
4 slices gherkins (or sauerkraut)
METHOD
For best results, cook your corned beef using this Golden Crusted Cider Corned Beef recipe.
Preheat your toasted sandwich maker or a frypan over a medium heat.
Butter both sides of the bread slices and lay them on a bread board.
Pile the cheese slices, corned beef and gherkins evenly on one slice and place the other slice of bread on top.
Place it in the toasted sandwich maker for 5 minutes or until the bread is golden brown and the cheese has melted. If using a fry pan, cook on one side for 3-5 minutes before flipping it over and cooking the other side.
