Beef and Bean Shakshuka
SERVES 4 | 20 MINS PREP | 20 MINS COOK TIME
INGREDIENTS
500g premium beef mince
1 onion, diced
1 Tbsp olive oil
1 garlic clove, minced
2 tsp ground cumin
2 tsp ground coriander
2 tsp paprika
2 large red capsicums, deseeded and sliced
2 Tbsp tomato paste
1 canned chopped tomatoes
¼ cup water
1 can beans in chilli sauce
4 eggs
To serve
50g feta cheese
Handful fresh coriander, chopped
Fresh parsley, chopped
Ciabatta bread
METHOD
In a large cast iron pan, heat a little olive oil and gently sauté the onion and garlic with the spices.
Add capsicum and cook for 5 minutes. Remove from the pan and add mince.
Cook for 5 minutes, breaking up the mince into pieces.
Add tomato paste and canned tomatoes. Using a wooden spoon, gently crushed the tomatoes to create a thicker sauce.
Add the canned beans in chilli sauce and the sautéed vegetables back in. Bring the heat up until it’s bubbling away and cook for a few minutes until thickened.
Make a few dents in the mixture and crack the eggs in. Cover the pan with a lid until the eggs are cooked through (it should take about 6 minutes).
Scatter feta cheese and fresh herbs over the top and serve immediately with toasted ciabatta on the side.
