Mustard & Garlic Crust Roast Beef

SERVES 6-8 | 20 MINS PREP | 65 MINS COOK TIME
INGREDIENTS
1.5kg beef topside roast
2 tsp sea salt
½ tsp ground black pepper
1 tbsp cooking oil
¼ cup breadcrumbs
¼ cup chopped parsley
¼ cup wholegrain mustard
4 finely chopped garlic cloves
2 tbsp olive oil
METHOD
Take the meat out of the fridge for an hour before cooking to come to room temperature.
Preheat oven to 230°C.
Season the roast with black pepper and 1 tsp of the salt.
Heat 1 tbsp of oil in a heavy frying pan and sear 1-2 minutes per side until browned.
Combine the rest of the ingredients in a bowl with the remaining tsp of salt. Put the seared topside roast onto a rack in a baking tray and spread thickly with the crust mixture.
Roast in the oven for 20 minutes at 230°C. Turn heat down to 170°C and roast for a further 40 minutes.
Remove from oven and rest for 15 minutes.
Gently remove ties and carve, then serve with your favourite vegetables.
